
Easter is spring and spring desserts often involve strawberries. This strawberry layer cake is a great dessert. In fact, the perfect dessert for Easter.

Cake cut into two pieces and then layered with strawberry jam, sliced strawberries and whipped cream.

The whole slathered with whipped cream and decorated with three prefect strawberries, sliced and fanned out. The perfect topper for a great summer and Easter dessert.

It's not a hard cake to make and The Lunch Bunch gave it rave reviews last Tuesday. And if they give it rave reviews, it truly is a great cake.

The cake can be made a couple of days ahead actually but the put together can't be done until the day of the event. I did it in the morning -- had company for lunch and then served the rest to company for dinner -- it was fine at dinner time.

Strawberries are my favourite food! They are the one thing I would have to have if stranded on a desert island. And to combine them with cake...well...yum!

dang that looks good. i'm serving warm brownies with raspberries but your dessert looks much more spring-like than mine will.
Your cake sounds delighful and easy to make! It would also be wonderful when the local fresh strawberries are in season this June! A keeper for sure :)
