Chocolate Melting Cake


Anyone who's been on a Carnival Cruise has at least one night for dessert had Chocolate Melting Cake.

Served with ice cream the cake has a warm liquid inside. Perfect with spoonfuls of vanilla ice cream.

On our recent cruise, we were guests at the Chef's Table and one of the "perks" was not only getting the recipe for the Chocolate Melting Cake but watching the head chef prepare it. Not in individual servings, however, but in one big dish.

It's a great dessert but must be served with the vanilla ice cream. I can't imagine the cake without it!

It's an easy dessert as well. And the recipe -- from the chef himself:

Carnival Cruise Line's Chocolate Melting Cake

10 eggs
250 grams sugar
250 grams flour
1 pound semi sweet chocolate
1 pound butter, melted

Beat eggs, add sugar and flour and beat again. Add chocolate and melted butter. Pour into souffle dish (a big one or individual ones). Put in a water bath and bake at 300 (convection oven) until the cake is done.

We had a family friend who used to make a cake called "Floating Island pudding cake", and it was all melty on the inside... Sounds very similar to this. Yummy!!

Isn't it just delicious?! Before Christmas I was looking for a specific baking chocolate. Had it in my hand, looked up and saw a photo of a chocolate "cupcake" oozing chocolate! I grabbed that package and the recipe was on the back. OH DELICIOUS!

Hi Martha,
It sounds positively sinful! Would it be appropriate to pour a little chocolate or coffee liquor over the ice cream (or would that be gilding the lily?)? Is the cake similar to Molton Chocolate cake?
