Lamb for Two

Easter dawned bright as we left very early for church for we had breakfast there.    Not a provided breakfast but what I call an "assigned" potluck (there are categories and you sign up in a category - i.e. breakfast casserole -- and bring your favorite breakfast casserole recipe).    I signed up for both a casserole and a bread.

My breakfast casserole of choice was Grits Gruyere and my bread was My English Kitchen's carrot/poppyseed tea cake.     The bread was made, cut, wrapped along with a container of soft cream cheese.    The grits were made but needed to be baked and so while I dressed, the grits baked.

It was a great breakfast.    Lots of fresh fruit, a plethora of breakfast casseroles and many breads from cinnamon rolls and sticky buns to tea breads like mine.

We ate and visited and had just one more cup of coffee before we were reminded that it was time for church.

After church, we grazed on the leftovers of breakfast (and who can resist just one more cinnamon roll?) and had more coffee.

Easter dinner this year, it was just the two of us.   But Easter Dinner

deserves the dining room.    And so I sat the table for a oneish Easter Dinner in the dining room.

The centerpiece was a silver basket filled with the honeysuckle that clambers over the front arbor.  

My grandmother's china and Jim's grandmother's cutlery set the table.    Old wine glasses that we got "somewhere" seem perfect.

Instead of one of us at each end, we sat across from one another on one end of the table.    The Easter Egg tree anchors the other end of the table.    A square lace tea cloth  is the perfect tablecloth for a dinner for two.

The dinner . . .

A rack of lamb.     We adore lamb, ham would have been too much for the two of us as would a lamb leg.   The rack, however, makes a perfect "for two" serving.

We started with . . .

Asparagus with Hollandaise sauce.   Not as a side dish but as a separate course -- a "starter".   It was the perfect starter!

And the star .  .

Two double chops each with roasted potatoes.    A sprig of garden rosemary is the perfect garnish.

And because it was just the two of us, we decided to end the meal in a quite European way

With greens and a wedge of Maytag blue.    Another glass of wine to wash down cheese and salad.  

And then it was time for a nap!!!!

In early afternoon, after a nap,

I had one of the leftover slices of carrot/poppyseed bread with a cup of tea.    The bread made the perfect Easter tea.
